Inulin is a kind of soluble dietary fiber, which belongs to a kind of fructan. Inulin is widely found in fruits and vegetables, mainly from plants such as chicory, Jerusalem artichoke, leeks, onions, garlic, asparagus, and bananas.


Among them, the inulin content in chicory is very high, which is an important source of inulin extraction. Generally, fresh chicory contains 68% inulin, and the inulin content in dried chicory is as high as 98%.
